Salmon with Mango
Salsa
1 Mango peeled,
pitted and diced
Add any other fruit you want to mix with the Mango (plums, peaches,
pears, nectarines, apricots, etc.)
1/4 cup chopped cilantro
1/4 cup chopped red onion
1 tablespoon lime juice
2 teaspoon Serrano chili, seeded and minced
1 teaspoon grated lime peel
1 garlic clove, finely chopped
2 tablespoons olive oil
2 6-oz salmon fillets
Prepare BBQ (medium high heat)
Combine first 7 ingredients in a small bowl, mix in 1 1/2 tablespoons
oil, add salt and pepper to taste.
Brush salmon with remaining oil and grill until opaque in center, about
5 minutes per side. Serve with salsa.
Makes 2 servings (can be doubled)
