6 slices bacon
1 cup diced onion
1 cup mushrooms (sliced or whole), optional
Dash pepper and salt
3 eggs
1 9in unbaked pie shell
4oz cheddar cheese
4oz jack cheese
4oz swiss cheese

Cook Bacon until crisp and set aside. In bacon grease cook onion and mushrooms until tender. Slightly beat eggs. Grate cheeses, crumble bacon and put into pie shell, put in mushrooms and onions. Sprinkle grated cheese over bacon, pour eggs over mixture.
Bake in a preheated oven at 375 for 25 minutes or until a knife comes out clean.

Do Not Use A Deep Dish Pie Pan!
