Broccoli Casserole
2 pkg fine
chopped broccoli
1 cup sharp cheddar cheese, grated
1 can cream of mushroom soup
1 cup mayonnaise
2 eggs, beaten
2 teaspoon minced onions
Sourdough breadcrumbs or Ritz crackers, crushed
Salt and pepper to taste
Cook and drain broccoli. Mix all ingredients together and place
in a greased casserole pan. Top with either the sourdough
breadcrumbs or the crushed Ritz crackers and dot with butter.
Bake at 350 degrees for 40 minutes uncovered. If casserole starts to
get to brown, lightly cover with foil.
